With just a few simple steps, you'll have a beautiful, delicious, healthy appetizer ready to serve when your guest arrive. You can make these ahead of time, cover and refrigerate for convenience. Now let's get into how to make these yummy Sprout Rolls.

Kitchen Tools You Will Need

  • Cutting Board
  • Sharp Knife
  • Clean cotton kitchen towel
  • tongs (2 pairs if you have them)
  • Skillet large enough for rice paper wraps

Preparing Your Ingredients and Workspace

Wash and cut your cucumber. Slice ends off and cut into thirds. You want your cucumbers to be about as long as your finished Sprout Roll. Take each third and cut lengthwise into matchstick sized pieces. Set asides, with your prepared Sprout Salad.

Next, you'll prepare your rolling station. Dampen a cotton kitchen towel and lay it flat on your work surface. This will help keep the cooked rice paper wraps from sticking to your surface when rolling. I found it helpful to keep a small bowl of water nearby to wet my fingertips when working with the rice paper. It gets very sticky when it starts to dry!

Working With Rice Paper Wraps

When we say these are sticky, we mean it! It took a few tries to keep them from sticking together. (Enjoy the bloopers in the video!) The key is to keep your surface, fingers and the rice papers wet. And, pulling them out of the hot water is much easier if you're using two pairs of tongs. Once the water cools a bit, it's easier to work with your fingers. Simple simmer an inch of salted water in a skillet large enough to fit your wraps. Once simmering, turn off heat. Dip your rice paper wraps in the hot water just until soft, approximately 10-20 seconds. Pull out with tongs and transfer to rolling surface. It's best to dip one rice paper wrap at a time, fill, roll and then repeat.

Filling and Rolling

Place your rice paper wrap on the damp towel and smooth edges of rice papers with wet fingers if needed. Place the desired amount of cucumbers and Sprout Salad at the bottom third of your rice papers. Fold the rice paper over the filling and tightly roll once. Fold the rice paper edges on top of the roll and then finish rolling to the edge of the rice paper. Voila! Your beautiful Sprout Roll is finished. Continue the process to make as many Sprout Rolls as you wish.
