“Green juice” can mean almost anything.
Some recipes rely heavily on fruit. Others use mature leafy vegetables, powders or concentrates. Ophema's approach begins with young, nutrient-dense greens like wheatgrass, pea shoots and sunflower shoots. Then we combine them with complementary fruits, vegetables, herbs and roots depending on the recipe.
That difference matters because sprouts aren't simply miniature vegetables. Research has found meaningful nutritional and phytochemical changes during germination. Sunflower sprouts contain phenolic compounds, flavonoids and tocopherols, while pea sprouts provide minerals and polyphenols and can develop higher concentrations of certain phytochemicals as they germinate.
